Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon turmeric
- 1 teaspoon Indian red chili powder
- 2 teaspoons whole mixed spices (garam masala)
- 1 teaspoon cumin seeds (jeera)
- 4-5 green cardamom pods
- 1 tablespoon coriander seeds
- 2 black cardamom pods
- 1 teaspoon fenugreek seeds
- 1-inch cinnamon stick
- 1 teaspoon fennel seeds
- 1 teaspoon carom seeds (ajwain)
- 1/2 teaspoon grated nutmeg
- 1/2 teaspoon mace
- 4-5 cloves
- 1 teaspoon mustard seeds
Instructions:
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat dry with paper towels. Place it on a cutting board.
- In a small skillet, dry roast the whole spices (cumin seeds, green cardamom pods, coriander seeds, black cardamom pods, fenugreek seeds, cinnamon stick, fennel seeds, carom seeds, nutmeg, mace, cloves, and mustard seeds) over medium heat for 2-3 minutes until fragrant. Stir occasionally to prevent burning. Remove from heat and let cool for a few minutes.
- Once cooled, transfer the roasted spices to a spice grinder or mortar and pestle, and grind them into a fine powder.
- In a small bowl, mix the ground spices with salt, black pepper, turmeric, Indian red chili powder, and whole mixed spices (garam masala).
- Rub the olive oil all over the chicken, then generously sprinkle the spice mixture all over the chicken, rubbing it into the skin and inside the cavity.
- Place the chicken in a roasting pan or baking dish, breast side up.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when pierced between the leg and thigh.
- Once done, remove the chicken from the oven and let it rest for about 10 minutes before carving.
